It’s a chance to ditch the calorie-laden deserts and dive headfirst into a guilt-free party for your taste buds. Forget about buttercream battles and fondant fiascos; with a fruit cake, you become the Picasso of produce, creating edible art that’s as pretty as it is delicious!

Making a cake completely out of fruit is a wonderful idea for So many reasons. Firstly, it offers a refreshing and healthier alternative to traditional baked cakes. By using a variety of fruits, you can create gorgeous and delicious dessert that is naturally sweet and packed with nutrients. Secondly, a fruit cake appeals to a wide range of dietary preferences and restrictions, including those who are vegan, gluten-free, or lactose intolerant. Finally, with the abundance of fruits available throughout the year, a fruit cake allows you to explore seasonal flavors and experiment with different combinations with each creation. Ultimately, making a cake entirely out of fruit is a fantastic idea that not only looks amazing, but is sure to satisfying every ones sweet tooth!

Here’s a step-by-step guide to creating a cake made entirely out of fruit:

Step 1: Gather the ingredients and tools.

– Large watermelon (ripe and firm)

-Large platter or cake stand (I bought this one at the Dollar Tree- read here for my other favorite Dollar Tree finds)

– Knife

– Cutting board

– Melon baller or spoon

– Assorted fruits and herbs for decoration (Any fruit that doesn’t brown when exposed to air will work. I like to use melons, grapes, berries, kiwi, & pineapple. Avoid apples and bananas.)

-Medium length wooden skewars

– Toothpicks (Beware the colored toothpicks might “stain” your fruit! Stick to natural wood toothpicks)

When choosing a ripe watermelon, here are some tips to keep in mind:

1. Look for a symmetrical shape: A ripe watermelon is usually uniform in shape, whether it’s round or oval. Irregularities in shape may indicate uneven ripening or potential internal issues.

2. Check the color: The skin of a ripe watermelon should have a deep, consistent color. Look for a rich green color with minimal white or pale spots. However, keep in mind that the skin color can vary depending on the variety of watermelon.

3. Tap it: Gently tap the watermelon with your knuckles. A ripe watermelon will produce a deep, hollow sound. If the sound is dull or flat, the watermelon may be overripe or underripe.

4. Examine the skin texture: The skin should be relatively smooth and firm. Avoid watermelons with soft spots, bruises, or dents!

5. Check the field spot: The field spot is the area where the watermelon rested on the ground. It should have a creamy yellow color, indicating that the watermelon is ripe. If the field spot is green or white, it may be underripe.

6. Lift it: Watermelons should feel heavy for their size, since most of the fruit consists of water. A ripe watermelon will feel dense and have a decent weight.

7. Look for a dried stem: Check the stem where it was attached to the vine. If it’s dried and brown, it’s a good indication that the watermelon is ripe. If it’s green or partially attached, the watermelon may be underripe.

8. Trust your senses: Smell the watermelon near the stem end. A ripe watermelon should have a sweet and slightly fragrant scent. If it lacks a distinct smell, it may not be fully ripe.

Step 2: Prepare the fruit.

– Wash the fruit thoroughly to remove any dirt or debris.

– Start with the watermelon on a clean cutting board.

Step 3: Cut the watermelon.

– Slice off the top and bottom of the watermelon to create a stable base.

– Stand the watermelon upright and carefully remove the rind using a downward cutting motion, following the contour of the fruit.

– Continue removing the rind until the watermelon is completely bare.

Step 4: Shape the watermelon.

– Decide on the desired shape of your “cake.” You can make it round, square, or any other shape you like, but I found round to be the easiest.

– Use a knife to shape the first watermelon layer, making sure to remove any excess flesh and maintaining the desired height.

– Repeat these steps for each layer- I like to use different melons or pineapple as well- feel free to get creative!

-Remember each fruit layer should be 1-3inches smaller in diameter than the last if you are going for the tiered “wedding cake” look.

Step 6: Stack the cake.

-Carefully stack the fruit layers with the largest ring of fruit on the bottom. Use wooden skewers poked through the layers to prevent them from shifting and sliding off eachother.

Step 7: Decorate the watermelon cake.

– Now the fun part! Decorate the cake with additional fruits. Use toothpicks to attach grapes, berries, kiwi slices, or any other fruits around the sides or on top.

– Be creative with the arrangement and use toothpicks sparingly to avoid overcrowding or damaging the watermelon.

-Feel free to use traditional cake toppers and candles as well.

Step 8: Chill the fruit cake.

– Place the watermelon cake in the refrigerator for at least 30 minutes to allow it to chill and firm up.

-Wrap the cake loosely in plastic wrap if you plan on refrigerating longer than a few hours to help maintain the moisture. (I also have used a plastic grocery bag over the top in a pinch!)

Step 9: Serve and enjoy.

– You can serve it as is or add a dollop of whipped cream or ice cream on top for added sweetness and decoration.

– Slice the watermelon cake using a sharp knife, just like you would with a regular cake.

-Be sure to remove toothpicks if giving the slices to small children as they can pose a choking hazard.

– Serve and watch all your guests enjoy your refreshing and delicious fruit “cake”!
